The Recipe

Ingredients

  • 2 cups short-grain brown or white rice, cooked
  • 1 block (14 oz) firm tofu, pressed and pan-fried
  • 2 cups baby spinach
  • 2 carrots, julienned
  • 1 zucchini, julienned
  • 1 cup shiitake mushrooms, sliced
  • 1 cup bean sprouts
  • Sesame oil, tamari, and garlic for seasoning each vegetable
  • Gochujang sauce: 2 tbsp gochujang, 1 tbsp sesame oil, 1 tbsp rice vinegar, 1 tsp maple syrup, 1 tsp tamari
  • Sesame seeds and scallions for garnish

Instructions

  1. Season and sauté each vegetable separately in sesame oil with garlic and tamari. Set each aside in its own bowl.
  2. Pan-fry tofu until golden and crispy on all sides.
  3. Whisk together all gochujang sauce ingredients.
  4. Divide rice among four bowls.
  5. Arrange each vegetable in separate sections over the rice.
  6. Add crispy tofu and drizzle with gochujang sauce.
  7. Garnish with sesame seeds and scallions. Mix thoroughly before eating.
